Grilled Cheese Potatoes
These flavourful potatoes are a popular choice for family meals and entertaining guests at a barbecue. Cubed red potatoes and chopped red onion are combined with butter, Swiss cheese, Parmesan, and seasonings, then sealed in foil. The parcel is cooked directly over hot coals, resulting in a deliciously cheesy and tender potato dish that serves four people.
Ingredients
- 1 -2 teaspoon vegetable oil
- 8 unpeeled red potatoes, cut into cubes
- 1 large red onion, finely chopped
- 1/2 cup butter, chopped
- 1/2 cup shredded swiss cheese
- 1/4 cup grated parmesan cheese
- 1/2 teaspoon garlic powder
- salt and pepper
Method
- Use a brush to coat a large piece of heavy duty foil with 1 -2 teaspoon of vegetable oil, or spray it well with cooking spray.
- Arrange the cubed red potatoes and finely chopped red onion in the middle of the prepared foil.
- Gently mix in the chopped butter, shredded Swiss cheese, grated Parmesan cheese, 1/2 teaspoon of garlic powder, and salt and pepper to taste.
- Fold the foil over the mixture to create a sealed parcel, then wrap it again with another layer of heavy duty foil for security.
- Cook the foil packet over hot coals for 25 minutes, then carefully turn it over and grill for another 25 minutes.
