This vibrant Greek salad combines salty griddled halloumi with sweet beetroot wedges and juicy orange segments. A simple dressing of orange juice and white wine vinegar brings the flavours together. It's a refreshing and light main or side dish that comes together in only 20 minutes. The hot, crisp cheese perfectly complements the cool, colourful salad.

Griddled Halloumi with Beetroot and Orange

Ingredients

  • 250g pack cooked beetroot cut into wedges
  • 3 medium oranges segments and juice
  • 4 tsp white wine vinegar
  • 2 x 250g packs halloumi cheese drained
  • 100g watercress

Method

  1. Place a large griddle or frying pan on the heat. Take a large bowl and mix the beetroot wedges with the orange segments, their juice and the white wine vinegar. Season this mixture and combine it gently.
  2. Slice each halloumi block into 4 pieces and season both sides with black pepper. Cook the halloumi for 1-2 mins per side until it is golden, crisp and starting to melt. Toss the watercress into the beetroot and orange salad. Share the salad onto plates and finish each serving with the hot slices of cheese.
