Griddled Corn Cakes
These American griddle cakes are a quick and satisfying treat, ready in just 4 minutes. A batter of plain flour, stone-ground cornmeal, and a touch of honey is mixed and cooked until puffed and golden brown. They make a perfect breakfast or accompaniment. The recipe yields four servings.
Ingredients
- Cooking spray
- 175g plain flour
- 30g sugar
- 100g stone-ground yellow cornmeal or polenta
- 2 tsp baking powder
- 1/2 tsp salt
- 180ml milk
- 1 tbsp honey
- 3 tbsps rapeseed or vegetable oil
- 1 large egg or 2 large egg whites
Method
- Lightly coat a large griddle with cooking spray and set it to preheat.
- Take a large bowl and mix the plain flour, sugar, cornmeal, baking powder, and salt together with a fork. Create a hollow in the middle of these dry ingredients.
- In a separate small bowl, thoroughly whisk the milk, honey, oil, and egg until combined.
- Pour the wet mixture from the small bowl into the well in the dry ingredients. Stir everything together until the batter is just blended and no dry pockets remain.
- For each corn cake, pour 60ml of the batter onto the hot griddle.
- Cook the cakes for 2 minutes on the first side, then flip and cook for another 2 minutes until they are puffed up, golden brown, and cooked through.
