Green Beans in Yellow Pepper Butter
This elegant side dish dresses up fresh green beans with a rich, nutty butter. The sauce is made by blending sauteed yellow pepper with pine nuts, lemon juice, and butter. The beans are then boiled with strips of fresh pepper until crisp-tender before being tossed in the prepared butter. It offers a distinctive flavour perfect for a special meal.
Ingredients
- 2 medium yellow peppers, divided
- 7 tablespoons butter, softened and divided
- 1/4 cup pine nuts
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 lbs fresh green beans, trimmed
Method
- Finely chop one yellow pepper and cook it in 1 tbsp butter until tender, then set it aside.
- Combine the pine nuts, lemon juice, salt, pepper, and the rest of the butter in a blender. Process until smooth, then add the cooked pepper and blend again. Set this butter mixture aside.
- Put the green beans in a saucepan and cover them with water. Slice the remaining yellow pepper into thin strips and add them to the pan. Bring the water to a boil, then cover and cook the beans for 5-7 minutes until they are crisp. Drain the beans and place them in a bowl, then toss them with the prepared butter.
