Greek Shrimp with Rigatoni
This flavourful Greek pasta combines fresh shrimp with a vibrant sauce of tomatoes, white wine, basil, and oregano. The prawns are quickly seared before being baked under a layer of crumbled feta cheese. The finished shrimp and sauce mixture is then spooned over cooked rigatoni pasta for a satisfying meal. It's a delicious combination of Mediterranean ingredients ready in about 40 minutes.
Ingredients
- 5 tablespoons olive oil
- 1 teaspoon finely chopped garlic
- 2 cups peeled cubed tomatoes, preferably fresh,about one pound whole
- 1/2 cup white wine
- salt & freshly ground black pepper
- 1/4 cup finely chopped fresh basil
- 1 teaspoon dried oregano leaves
- 1 1/2 lbs fresh medium-sized shrimp, about 48,peeled,deveined,leaving the last tail segment on
- 1/8 teaspoon red pepper flakes
- 1/2 lb crumbled feta cheese
- 1/3 lb ziti pasta or 1/3 lb spiral shaped pasta
Method
- Set your oven to heat to 400 degrees.
- Warm 1 Tablespoon of the olive oil in a skillet and stir in the chopped garlic.
- After a brief stir, incorporate the cubed tomatoes.
- Let this cook for about one minute before pouring in the white wine and adding the salt, pepper, basil, and oregano.
- Allow the sauce to simmer for about 10 minutes.
- Season the prepared shrimp with salt and pepper.
- In a separate large skillet, heat the remaining 4 Tablespoons of oil and add the shrimp.
- Cook the shrimp for about 1 minute, just until their colour changes to red.
- Scatter the red pepper flakes over the cooked shrimp.
- Transfer the shrimp along with any cooking juices into a small baking dish.
- Cover the shrimp with the crumbled feta cheese.
- Pour the prepared tomato sauce over the shrimp and cheese layer.
- Place the dish in the oven to bake for 10 minutes.
- While the shrimp bakes, prepare the rigatoni pasta according to its package instructions and drain it.
- Ensure the pasta is not overcooked.
- Plate the cooked rigatoni and top it with the baked shrimp and sauce mixture.
