Greek Pasta
This Greek pasta offers a delicious variation on a classic dish. It combines ground meat with onions, warm spices like cinnamon and cloves, and a rich tomato sauce simmered with red wine. The sauce develops even more flavour when prepared in advance. It is served over penne or rigatoni pasta and finished with a generous sprinkle of Parmesan cheese. Ideal for serving four to five people, it is ready in about 35 minutes.
Ingredients
- 2 tablespoons olive oil
- 1 lb ground sirloin or 1 lb ground turkey
- 2 large onions, thinly sliced
- 1 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/8 teaspoon ground cloves
- 1/3 cup dry red wine
- 2 tomatoes, diced
- 1 (8 ounce) can tomato sauce
- 8 ounces penne or 8 ounces rigatoni pasta
- freshly grated parmesan cheese
- salt and pepper
Method
- Warm the olive oil in a large, heavy-based pot.
- Cook the meat and sliced onions until browned, then season with salt and pepper.
- Lower the heat and stir in the cinnamon, cayenne pepper, and ground cloves, cooking for 5 minutes.
- Pour in the red wine, add the diced tomatoes and tomato sauce, then let it simmer until the sauce thickens.
- For the best flavour, allow the sauce to rest overnight before reheating.
- Spoon the finished sauce over your cooked pasta to serve.
