This Greek pasta offers a delicious variation on a classic dish. It combines ground meat with onions, warm spices like cinnamon and cloves, and a rich tomato sauce simmered with red wine. The sauce develops even more flavour when prepared in advance. It is served over penne or rigatoni pasta and finished with a generous sprinkle of Parmesan cheese. Ingredients

  • 2 tablespoons olive oil
  • 1 lb ground sirloin or 1 lb ground turkey
  • 2 large onions, thinly sliced
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/8 teaspoon ground cloves
  • 1/3 cup dry red wine
  • 2 tomatoes, diced
  • 1 (8 ounce) can tomato sauce
  • 8 ounces penne or 8 ounces rigatoni pasta
  • freshly grated parmesan cheese
  • salt and pepper

Method

  1. Warm the olive oil in a large, heavy-based pot.
  2. Cook the meat and sliced onions until browned, then season with salt and pepper.
  3. Lower the heat and stir in the cinnamon, cayenne pepper, and ground cloves, cooking for 5 minutes.
  4. Pour in the red wine, add the diced tomatoes and tomato sauce, then let it simmer until the sauce thickens.
  5. For the best flavour, allow the sauce to rest overnight before reheating.
  6. Spoon the finished sauce over your cooked pasta to serve.
