Greek Honey Cake

Ingredients

  • 1 cup honey
  • 0.75 cup white sugar
  • 0.75 cup water
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon orange zest
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.75 cup butter
  • 3 eggs
  • 0.25 cup milk
  • 1 cup chopped walnuts

Method

  1. Place the honey, 1 cup sugar, and water into a saucepan and bring to a simmer, cooking for 5 minutes. Add the lemon juice, bring to a boil, and cook for 2 minutes. Take the pan off the heat and allow the syrup to cool as you make the cake batter.
  2. Set your oven to 350 degrees F (175 degrees C). Prepare a 9-inch square baking pan by greasing and flouring it.
  3. Mix the flour, baking powder, orange zest, cinnamon, and salt together in a bowl, then set this dry mixture aside.
  4. In a large bowl, cream the remaining 3/4 cup sugar with the butter until pale and fluffy. Incorporate the eggs one by one. Gently beat in the reserved flour mixture, alternating with the milk, mixing just until combined. Fold in the chopped walnuts. Transfer the batter to the prepared pan.
  5. Place the pan in the preheated oven and bake until a toothpick inserted into the centre comes out clean, about 40 minutes.
  6. Take the baked cake from the oven and use a toothpick to poke holes all over the top. Gradually ladle the cooled honey syrup over the warm cake. For optimal results, let the cake stand for 4 to 6 hours to cool completely and let the syrup soak in before you cut and serve it.
