Gooey Caramel Sauce
This recipe creates a wonderfully rich and gooey caramel. It can be served thick as a candy filling or thinned with water to create a sauce for ice cream or apples. It is best to prepare all your ingredients before you begin, as the sugar cooks quickly. The recipe yields about 1 cup and can easily be doubled if needed.
Ingredients
- 1/4 cup sugar
- 1/4 cup brown sugar
- 3 tablespoons butter
- 1 tablespoon cream
- 1/2 cup corn syrup
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
Method
- Place 1/4 cup sugar into a stainless steel saucepan and warm it, avoiding stirring until the sugar starts to melt.
- Once melting begins, stir the sugar continuously until it is fully liquid and starts to become a golden brown colour.
- As soon as the sugar takes on a caramel hue, take the pan off the heat and promptly mix in the butter and brown sugar.
- After the butter and brown sugar are fully combined with the caramel, gently warm the mixture if necessary, then add the vanilla extract, 1/2 cup corn syrup, 1 tablespoon cream, and 1/4 teaspoon salt.
- Mix all the ingredients thoroughly until well blended.
- Allow the caramel to cool, during which time it will become thicker.
- To achieve a thinner sauce, incorporate water one tablespoon at a time. for a thicker consistency, use less corn syrup.
