These British flapjacks combine oats, walnuts, and orange for a delicious treat. The mixture is baked until golden, then finished with a glossy orange marmalade glaze. Ideal for an afternoon tea spread or as a snack, they can be stored for several days. This recipe yields 12 pieces and takes just under an hour to prepare and bake.

Golden Orange and Walnut Flapjacks

Ingredients

  • 250g unsalted butter chopped into pieces
  • 250g golden caster sugar
  • 175g golden syrup
  • 425g porridge oats
  • 50g/2oz walnut pieces
  • finely grated zest of 1 large orange
  • 3 tbsp fine-cut orange marmalade

Method

  1. Set your oven to 180C/gas 4/fan 160C and thoroughly butter a 28 x 18cm shallow baking tin. In a pan, melt the butter, sugar and syrup, stirring continuously. Remove from the heat and mix in the oats, walnuts and orange zest until you have a soft mixture.
  2. Transfer the mixture to the prepared tin and press it level. Bake for around 30 minutes until the edges are golden brown but the centre remains slightly soft. Take it out of the oven and, while still warm, score 12 pieces by cutting halfway through with a sharp knife. Allow to cool.
  3. Warm the marmalade with 1 tbsp water until it turns syrupy. Brush this glaze over the cooled flapjack base. Leave it to set completely before cutting fully into 12 pieces. Store in an airtight tin for up to a week.
