This French-style quiche offers a delicious gluten-free option for any meal. It features a homemade pastry case filled with a savoury mixture of soft goat's cheese, fresh watercress and gently fried onion, all bound with eggs and milk. The optional addition of nutmeg provides a subtle warmth. It's a versatile dish suitable for a buffet, dinner or a packed lunch.

Goat's Cheese and Watercress Quiche

Ingredients

  • 225g gluten-free flour plus extra for rolling
  • 100g butter
  • 1 large egg beaten, plus extra beaten egg for brushing
  • 1 medium onion finely chopped
  • 1 tbsp oil
  • 100g watercress roughly chopped
  • 2 large eggs
  • 150ml milk
  • 150ml log soft rindless goat's cheese in rough chunks
  • freshly grated nutmeg optional

Method

  1. Combine the gluten-free flour with a pinch of salt in a large bowl. Rub the butter into the flour until it resembles fine breadcrumbs. Mix in the beaten egg and approximately 1-2 tbsp water to create a soft dough. Knead the dough thoroughly, then wrap it and place it in the refrigerator to chill for at least 30 minutes.
  2. Heat your oven to 200C/gas 6/fan 180C. Knead the chilled pastry once more, then roll it out to fit a 20cm loose-bottomed flan tin. There is no need to chill it again as it will not shrink. Use any spare pastry to repair holes, then brush the entire pastry base and sides with beaten egg.
  3. To prepare the filling, cook the finely chopped onion in the oil until it has softened. Add the roughly chopped watercress and continue to cook until it just wilts. In a separate bowl, whisk together the 2 large eggs and the milk. Stir the cooked watercress mixture and the chunks of goat's cheese into the egg mixture.
  4. Season the filling and add a pinch of nutmeg if desired. Place the flan tin on a baking sheet and bake the pastry case blind for 5 minutes. Pour in the filling and return to the oven to bake for 15 minutes. Lower the oven temperature to 180C/gas 4/fan 160C and continue to cook for 25-30 minutes until the filling is lightly set.
