Gluten-Free Sweet Potato Latkes
These crispy latkes combine sweet potatoes, Granny Smith apple and onion for a gluten-free twist on a classic. Grated ingredients are mixed with white rice flour and eggs before being pan-fried until golden. They make a delicious side dish or appetiser, best served warm with traditional accompaniments of sour cream and applesauce. The recipe yields enough for four people and takes about 40 minutes to prepare and cook.
Ingredients
- 1 medium onion, peeled
- 1 pound sweet potatoes, peeled (about two large sweet potatoes)
- 1/2 cup white rice flour
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 3 large eggs, beaten
- Vegetable oil, for frying
- Sour cream and applesauce for serving
Method
- Position an oven rack in the centre and heat the oven to 200°F (90°C). Grate the peeled onion and sweet potatoes using a food processor with a medium grate or the large side of a box grater. Place them together in a medium bowl.
- Take half of the grated mixture and place it onto a clean kitchen towel. Wrap the towel around it and squeeze firmly to remove as much liquid as possible. Transfer the squeezed mixture to a large bowl and repeat the process with the remaining half.
- Whisk the white rice flour, 2 teaspoons salt, and 1 teaspoon freshly ground black pepper together in a small bowl. Stir this into the potato mixture. Add the 3 beaten eggs and mix to combine. Place layers of paper towels on a rimmed baking sheet and set it aside near your cooking area. Pour vegetable oil to a depth of 1/4 inch into an 8-inch cast-iron skillet and heat it over medium-high heat until it shimmers.
- Cook the latkes in batches. Drop scant 1/4-cup portions of the mixture into the hot oil. it should sizzle on contact. Use two forks to gently flatten and slightly separate each latke in the pan.
- Fry each latke for 2 to 3 minutes until it becomes a deep golden brown. Turn it over with a spatula and cook for another 2 to 3 minutes. Move the cooked latkes to the paper towel-lined baking sheet and keep them warm in the preheated oven while you fry the rest. Serve with sour cream and apple sauce.
