Glorified Baked Cabbage
This classic Eastern European side dish transforms humble cabbage into a rich and comforting bake. Finely chopped cabbage is simmered until tender, then combined with a creamy sauce made from melted processed cheese and cream of mushroom soup. The mixture is topped with breadcrumbs and baked until golden and bubbling. It yields a satisfyingly creamy and savoury result that serves ten people.
Ingredients
- 1 head cabbage, finely chopped
- 6 tablespoons margarine
- 1 onion, minced
- 0.5 pound processed cheese food (such as Velveeta ®), cut into chunks
- 1 (10.75 ounce) can cream of mushroom soup
- 0.75 cup bread crumbs
- salt and pepper to taste
Method
- Preheat your oven to 350 degrees F (175 degrees C).
- Put the chopped cabbage into a large pot and cover it with lightly salted water. Bring the water to a boil, then lower the heat to medium-low. Cover the pot and let the cabbage simmer for 5 to 7 minutes until it becomes tender. Drain the water away and let the cabbage steam-dry for 1 to 2 minutes.
- Melt the margarine in a large skillet. Add the minced onion and cook it until it turns golden. Turn the heat down to low. Add the chunks of cheese and let them simmer until fully melted. Stir in the drained cabbage, the can of cream of mushroom soup, the bread crumbs, and salt and pepper to taste. Move this mixture into a 2-quart casserole dish.
- Place the dish in your preheated oven and bake for 20 to 30 minutes, until the cheese sauce is bubbling.
