  • 1 cup white sugar
  • 1 egg
  • 1 tablespoon butter
  • 1 tablespoon apricot jam
  • 1 tablespoon white vinegar
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1 cup milk
  • 1 cup all-purpose flour
  • 1 cup milk
  • 0.5 cup butter
  • 0.5 cup white sugar
  • 0.25 cup water

Method

  1. Set your oven to 400 degrees F (200 degrees C). Prepare a 9-inch cake pan by greasing and flouring it.
  2. In a large bowl, use an electric mixer to beat the sugar, egg, and butter until creamy. Mix in the apricot jam, vinegar, ginger, and baking soda. Incorporate the milk and flour, beating until you have a smooth batter. Transfer this batter to your prepared pan.
  3. Place the pan in the oven and bake until a toothpick inserted into the middle emerges clean, which should take about 35 minutes.
  4. To prepare the sauce, place the milk, butter, sugar, and water in a saucepan about 5 minutes before the pudding finishes baking. Heat over medium heat until the mixture boils, stirring until it becomes smooth. Once the pudding is out of the oven, pour this hot sauce all over it, allowing it to soak in.
