Ginger Lemon Fizz

Ingredients

  • 50g fresh root ginger roughly chopped
  • 300g caster sugar
  • 2 lemons sliced, plus extra to serve
  • sparkling water

Method

  1. Combine the roughly chopped ginger, caster sugar, and lemon slices in a pan with 150-200ml water. Bring the mixture to a boil and continue cooking until the sugar has fully dissolved. Remove from the heat, allow it to cool, then press everything through a sieve.
  2. For serving, transfer the syrup into a pitcher. Top it up with sparkling water and garnish with additional lemon slices.
