Create a zesty homemade syrup for a sparkling summer drink. This British recipe combines fresh ginger and lemon with sugar to make a concentrate. Simply mix the syrup with sparkling water for a revitalising non-alcoholic beverage, perfect for serving at afternoon tea or on a warm day. The recipe yields about 500ml of syrup and takes just 15 minutes to prepare.
Ingredients
- 50g fresh root ginger roughly chopped
- 300g caster sugar
- 2 lemons sliced, plus extra to serve
- sparkling water
Method
- Combine the roughly chopped ginger, caster sugar, and lemon slices in a pan with 150-200ml water. Bring the mixture to a boil and continue cooking until the sugar has fully dissolved. Remove from the heat, allow it to cool, then press everything through a sieve.
