This zesty Chinese condiment is a spicier take on a traditional oil. It combines fresh ginger, spring onion and whole red chilli, which are finely chopped and then sizzled in hot vegetable oil. The result is a fragrant, fiery oil perfect for drizzling over stir fried vegetables or our one pot crystal chicken. It can be prepared a day in advance, making it a convenient flavour booster for your meals.

Ingredients

  • white parts of one bunch spring onions
  • a large piece of ginger
  • whole red chilli
  • 3 tbsp vegetable oil

Method

  1. Finely chop the white parts from a bunch of spring onions, a large piece of ginger and a whole red chilli, then place them into a small dish.
  2. Heat 3 tbsp of vegetable oil until it begins to smoke.
  3. Carefully pour the hot oil into the dish with the chopped ingredients and allow it to sizzle.
  4. The oil can be covered with cling film and made up to one day ahead of use.
