Ginger & Chilli Oil
This zesty Chinese condiment is a spicier take on a traditional oil. It combines fresh ginger, spring onion and whole red chilli, which are finely chopped and then sizzled in hot vegetable oil. The result is a fragrant, fiery oil perfect for drizzling over stir fried vegetables or our one pot crystal chicken. It can be prepared a day in advance, making it a convenient flavour booster for your meals.
Ingredients
- white parts of one bunch spring onions
- a large piece of ginger
- whole red chilli
- 3 tbsp vegetable oil
Method
- Finely chop the white parts from a bunch of spring onions, a large piece of ginger and a whole red chilli, then place them into a small dish.
- Heat 3 tbsp of vegetable oil until it begins to smoke.
- Carefully pour the hot oil into the dish with the chopped ingredients and allow it to sizzle.
- The oil can be covered with cling film and made up to one day ahead of use.
