This comforting Chinese noodle dish is a real crowd-pleaser and can be prepared quickly. It features chicken breast stir-fried with fresh ginger, garlic, and spring onions, all tossed with noodles and a savoury sauce of saké and soy. Finished with strips of egg omelette, it's a complete and flavourful meal ideal for dinner. The recipe serves 10 people and takes just 35 minutes from start to finish.

Ginger and Chicken Noodles

Ingredients

  • 3 eggs
  • 3 tbsp vegetable oil
  • 4 skinless boneless chicken breast fillets
  • 100g ginger peeled and finely sliced
  • 6 garlic cloves finely sliced
  • 2 bunches spring onion cut into diagonal strips
  • 200ml saké or dry sherry
  • 3x 200g packs straight-to-wok noodle
  • 3 tbsp soy sauce

Method

  1. Whisk the eggs with 2 tbsp water. Warm 1 tbsp of the oil in a large non-stick frying pan. Pour the egg mixture into the pan and cook for 2 mins until firm, then flip it and cook for another 1 min. Transfer the cooked omelette to a board, let it cool slightly, then slice it into strips and set them aside.
  2. Warm the rest of the oil in a large wok. Stir-fry the chicken for 5 mins until it colours, then add the ginger and garlic and cook for a few minutes. Add most of the spring onion strips, keeping some back for garnish, followed by the sake or sherry and the noodles. Mix everything together well. Pour over the soy sauce, stir through the shredded omelette, scatter the reserved spring onions on top, and serve.
