German-Style Cheese and Bacon Pancakes
Inspired by German flavours, this dish tops ready-made pancakes with crisp smoked bacon, sliced shallots and melted Gruyère cheese. A seasoned crème fraîche mixture adds a creamy base, while a quick cucumber salad with white wine vinegar and fresh dill provides a tangy side. It's a simple yet satisfying meal, perfect for a family supper or a special lunch, ready in just 30 minutes.
Ingredients
- 200g pack diced smoked bacon lardons
- 200ml crème fraîche
- pinch of ground nutmeg
- 1 tsp caraway seeds (optional)
- 4 pre-made large pancakes
- 2 shallots finely sliced
- 50g finely grated gruyère
- 1 whole cucumber peeled, halved and sliced
- 2 tbsp white wine vinegar
- 2 tbsp chopped fresh dill
Method
- Set your grill to high. Place the bacon lardons on a baking tray and grill them for around 10 mins until they become crisp. Remove and set aside. In a separate bowl, combine the crème fraîche with the nutmeg and optional caraway seeds, then season the mixture.
- You will need to work in batches. Put one pancake on a non-stick baking sheet. Spread the crème fraîche mixture evenly across all 4 pancakes. Scatter the cooked lardons, sliced shallots and grated Gruyère over each pancake.
- Place the prepared pancakes under the grill for 2-3 mins, again working in batches, until the cheese turns golden and bubbles. As they cook, toss the sliced cucumber with the white wine vinegar and chopped dill, season it, and serve this salad with the hot pancakes.
