German Spaetzle Dumplings
These traditional German spaetzle are soft, noodle-like dumplings that offer pure comfort food. The simple batter is made from flour, eggs, milk and seasoning, then pressed into simmering water to cook. After boiling, the dumplings get a quick sauté in butter for a golden finish and are garnished with chopped parsley. Ingredients
- 1 cup all-purpose flour
- 0.5 teaspoon ground nutmeg
- 0.5 teaspoon salt
- 1 pinch freshly ground white pepper
- 2 eggs
- 0.25 cup milk
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley
Method
- Collect all the required ingredients.
- Half-fill a large pot with water and bring it to a boil, then reduce the heat to maintain a gentle simmer.
- In a medium bowl, combine the flour with the nutmeg, salt and white pepper.
- Beat the eggs together in a separate small bowl.
- Stir the beaten eggs and milk alternately into the dry mixture until you have a smooth batter.
- In batches, press the dough through a spaetzle maker or a colander with large holes directly into the simmering water.
- Allow the spaetzle to cook for 5 to 8 minutes before removing them with a slotted spoon and draining thoroughly.
- Heat the butter in a large skillet, add the cooked spaetzle and stir gently until they are warmed through.
- Finish by sprinkling the dumplings with the chopped fresh parsley before serving.
