Garlic and Rosemary Shrimp
This recipe showcases shrimp prepared with a robust blend of garlic, fresh rosemary, oregano, and a touch of chilli heat. Ingredients
- 3 lbs unpeeled medium shrimp
- 1/4 cup butter or 1/4 cup margarine
- 1/4 cup olive oil
- 1 large head of garlic, the whole thing, peeled and separated into cloves
- 1 cup white wine
- 1/4 cup white wine vinegar
- 1/4 cup lemon juice
- 4 dried hot red chili peppers
- 3 bay leaves
- 3/4 teaspoon salt
- 1 tablespoon fresh oregano or 1 teaspoon dried oregano
- 1 tablespoon fresh rosemary or 1 teaspoon dried rosemary
- 1/2 teaspoon dry crushed red pepper
Method
- Peel the shrimp, ensuring the tails remain attached, then set them aside.
- Heat the butter and olive oil in a large skillet. Add the peeled garlic cloves and cook them for 2-4 minutes.
- Pour in the white wine along with the next eight ingredients, from vinegar to crushed red pepper. Allow the mixture to reach a boil, then let it simmer for 10 minutes until the volume is reduced by half.
- Place half of the prepared shrimp into the pan and cook them for 5 minutes until they become pink.
- Use a slotted spoon to take the cooked shrimp out of the pan and set them aside.
- Cook the remaining half of the shrimp in the same pan for 5 minutes until they also turn pink.
- Pass the remaining cooking liquid through a strainer.
- Present the shrimp with the strained broth on the side, if you like.
