This vibrant salad showcases the best of summer garden vegetables. Tomatoes, cucumbers, carrots, onion, bell peppers and cauliflower are chopped and combined with a simple seasoning of salt, pepper, sugar and vinegar. Ingredients

  • 8 tomatoes
  • 2 cucumbers
  • 3 -4 carrots
  • 1 medium onion
  • 2 green bell peppers
  • 1/2 head cauliflower
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 teaspoons sugar
  • 4 teaspoons vinegar

Method

  1. Wash all the vegetables, then chop them into small pieces and place them in a large mixing bowl.
  2. Sprinkle in the salt, pepper, sugar and vinegar, then toss everything together thoroughly.
  3. Place the bowl in the refrigerator and allow the salad to chill for at least 1 to 2 hours so the flavours can meld.
  4. The salad will produce its own light dressing from the combined vegetable juices as it rests.
