Garden Salad
This vibrant salad showcases the best of summer garden vegetables. Tomatoes, cucumbers, carrots, onion, bell peppers and cauliflower are chopped and combined with a simple seasoning of salt, pepper, sugar and vinegar. After a brief chill, the vegetables release their natural juices to form a light, flavourful dressing. It's a crisp, refreshing side dish perfect for warm weather meals.
Ingredients
- 8 tomatoes
- 2 cucumbers
- 3 -4 carrots
- 1 medium onion
- 2 green bell peppers
- 1/2 head cauliflower
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 4 teaspoons sugar
- 4 teaspoons vinegar
Method
- Wash all the vegetables, then chop them into small pieces and place them in a large mixing bowl.
- Sprinkle in the salt, pepper, sugar and vinegar, then toss everything together thoroughly.
- Place the bowl in the refrigerator and allow the salad to chill for at least 1 to 2 hours so the flavours can meld.
- The salad will produce its own light dressing from the combined vegetable juices as it rests.
