Frozen Lychee and Mint Cocktails

Ingredients

  • 400g can lychee
  • a small bunch of mint leaves
  • 100ml vodka (or use lychee juice for a non-alcoholic version)
  • juice 2 limes
  • 2 handfuls ice

Method

  1. Drain the syrup from a can of lychees directly into a blender jug. Place four of the lychees into the blender along with a small bunch of mint leaves, saving a few for later, the vodka and the lime juice.
  2. Place two handfuls of ice into the blender and process the mixture until it reaches a slushy consistency. Pour into glasses and finish each with a mint sprig and a lychee for garnish.
