Frozen Fruit Sticks with Passion Fruit and Lime Drizzle
These colourful frozen fruit sticks are an ideal treat for warm weather. Fresh fruit chunks are threaded onto skewers and glazed with a vibrant sauce made from passion fruit, lime juice and a hint of icing sugar. After a brief freeze, they become a cool, healthy snack that is especially popular with children. The recipe is quick to prepare, requiring only 20 minutes of active time.
Ingredients
- 100g strawberries hulled and halved
- 8 seedless grapes
- 100g/4oz mango chunks
- 100g/4oz melon chunks
- 2 kiwi fruit peeled and cut into chunks
- 100g/4oz pineapple chunks
- juice 2 limes
- 4 passion fruits halved and seeds scraped out
- 1 tsp icing sugar
Method
- Combine the lime juice, passion fruit seeds and icing sugar in a small bowl, mixing until the sugar dissolves fully. For a smoother consistency, you can strain the mixture to eliminate the seeds, or keep them included.
- Thread the prepared fruit pieces onto wooden skewers. Spoon most of the sauce over the skewers, setting aside a small amount. Place the skewers in the freezer for 45 mins until they begin to firm up. Offer them with the reserved drizzle for dipping.
