Fried Coconut Bananas
This Thai dessert offers a wonderfully sticky and sweet conclusion to any meal. Bananas are fried in melted palm sugar until caramelised, then served in a rich, syrupy coconut milk sauce. The dish is finished with a scoop of coconut ice cream and a scattering of toasted coconut for extra flavour and texture. It's a simple yet impressive treat that comes together in about 20 minutes, perfect for two people.
Ingredients
- 2 tbsp palm sugar or soft light brown sugar
- 2 bananas peeled, halved lengthways, then each chunk halved again
- 150ml coconut milk
- coconut ice cream and toasted, shredded coconut, to serve
Method
- Melt the sugar in a small frying pan. Once it has liquefied, place the bananas in the pan and cook until caramelised on each side for 3-4 mins. Remove them and set aside.
- Pour the coconut milk into the pan along with a pinch of salt, mixing it into the sugar. Let it bubble until it forms a syrup. Split the syrup between two bowls, arrange the caramelised bananas on top, then finish with a scoop of ice cream and a sprinkle of toasted coconut.
