Fresh Watermelon and Fruit Salad
This colourful and refreshing salad is served in its own watermelon bowl, making it a stunning centrepiece for a gathering. It combines the sweet flavours of watermelon, honeydew, cantaloupe, fresh pineapple, strawberries, blueberries and raspberries. A simple citrus dressing of lemon, lime and orange juice with sugar enhances the natural fruit flavours. It is an ideal make-ahead dish for a party or barbecue, serving 20 to 30 people and ready in about 20 minutes.
Ingredients
- 1 watermelon (seedless is so much easier)
- 1 honeydew melon
- 1 cantaloupe
- 1 fresh pineapple
- 2 cups strawberries
- 2 cups blueberries
- 2 cups raspberries
- 2 teaspoons lemon juice
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 1/3 cup water
- 2/3 cup sugar
Method
- Cut the watermelon lengthwise, starting about one third of the way down from the top.
- To create a stable bowl, trim a small piece from the bottom so it sits flat.
- Use a melon baller or knife to scoop the watermelon flesh into balls or chunks.
- Remove all remaining flesh from the inside of the watermelon shell.
- Prepare the honeydew and cantaloupe by cutting them into balls or chunks.
- Cut the fresh pineapple into bite-sized chunks.
- Gently combine all the prepared fruits inside the hollowed watermelon bowl.
- In a separate container, mix the lemon juice, lime juice, orange juice, 1/3 cup water and 2/3 cup sugar together.
- Drizzle the citrus dressing over the mixed fruits and toss carefully to coat.
- You can chill the salad before serving or enjoy it straight away.
