Fresh Mint Sauce
This vibrant mint sauce offers an Indian twist on a classic lamb accompaniment, inspired by a London restaurant. It combines fresh coriander and mint with green chilli, mango, and cumin seeds, blended until smooth and finished with yogurt and lemon. The result is a bright, flavourful condiment that can be prepared in just 20 minutes and stored chilled until needed.
Ingredients
- 3handfuls of fresh coriander leaves
- 1 handful of fresh mint leaves
- 1 green chilli
- 1 small ripe mango peeled and diced
- 1/2 tsp cumin seeds
- 1/2 tsp golden caster sugar
- juice of half a lemon
- 1 tbsp natural yogurt
Method
- 1. Place all the ingredients apart from the yogurt into a food processor and blend to a smooth consistency. 2. Transfer the mixture to a bowl and mix in the yogurt thoroughly. 3. Add salt to taste and refrigerate the sauce until you are ready to serve it.
