This decadent brunch dish transforms slices of brioche into a sweet, stuffed French toast. The bread is filled with a simple banana and maple syrup mixture, then dipped in a spiced custard before being pan-fried to a golden finish. It is baked briefly to warm through and served with extra maple syrup and a dollop of vanilla yogurt for a truly luxurious start to the day. The combination of cinnamon, nutmeg, and vanilla creates a wonderfully aromatic flavour.

French Toast Stuffed with Banana & Maple Syrup

Ingredients

  • 2 large ripe bananas
  • 1 tbsp maple syrup plus extra to serve
  • 2 eggs
  • 50ml milk
  • 50ml double cream
  • drop of vanilla extract
  • 50g caster sugar
  • 1 tsp cinnamon
  • pinch of nutmeg
  • 1 large brioche loaf, cut into 4 x 2in slices
  • 100g butter
  • vanilla yogurt to serve

Method

  1. Slice and peel the bananas, then mash them together with the maple syrup. Set this mixture aside. Combine the eggs, milk, double cream, vanilla extract, caster sugar, cinnamon, and nutmeg in a wide, shallow dish, whisking until fully blended.
  2. Preheat your oven to 160C/140C fan/gas 3. Carefully cut a pocket into each slice of brioche from the top, ensuring you leave a border of at least 1cm. Fill these pockets with the reserved banana mixture. Dip each stuffed brioche slice into the egg mixture, allowing it to soak for 30 secs on each side.
  3. Melt 50g of the butter in a large non-stick frying pan. Once the butter is sizzling, add the brioche slices and cook for 2 mins per side until they turn a golden brown colour, working in batches if needed. Move the cooked slices to the preheated oven and let them warm through for 5 mins. To serve, drizzle with additional maple syrup and add a spoonful of vanilla yogurt.
