These homemade flatbreads are topped with a fragrant mixture of minced lamb, onion, and spices. The dough is simple to prepare, making it an engaging activity for young helpers. Fragrant lamb flatbreads

Ingredients

  • half a 500g pack bread mix - or make your own (see below)
  • 1 onion finely chopped
  • 250g lean minced lamb
  • 1 garlic clove crushed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp natural yogurt
  • 2 tbsp pine nut
  • handful mint chopped (or use a sprinkling of dried)
  • 250g strong white flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 tsp easy blend yeast from a 7g sachet
  • 150ml warm water

Method

  1. Set your oven to 220C/fan 200C/gas 7. Prepare the bread mix according to the packet directions. Split the dough in two and shape each piece into a large oval. Place them on a floured baking tray.
  2. Place the chopped onion, minced lamb, crushed garlic, spices, and yogurt in a bowl. Season this mixture and stir to combine. Break the lamb mixture over the dough bases, spreading it nearly to the edges. Add the pine nuts on top. Bake for 15-18 mins until the bread is golden and crisp and the meat is cooked through. Finish by sprinkling chopped mint over the top.
  3. FOR THE DOUGH: Combine the strong white flour, salt, sugar, and yeast in a bowl. Pour in the warm water and mix until a soft dough forms. Knead the dough for 2 mins on a floured surface, then roll it out. Apply the topping as described. Allow the topped flatbreads to rest in a warm spot for 15 mins before you bake and serve them.
