Florentine Biscuits

Ingredients
- 50g ground pecans
- 110g unsalted butter
- 150g brown sugar
- 120ml golden syrup
- 140g flour
- 100g chocolate chips
Method
- Preheat your oven to 180°C / gas mark 4. Prepare a baking sheet by greasing it lightly.
- Process the pecans in a food processor until they form fine crumbs. Take care to stop before they turn into a paste.
- Melt the butter in a small saucepan. Stir in the brown sugar and golden syrup, then bring the mixture to a boil. Take the pan off the heat and mix in the ground pecans and flour until well combined.
- Spoon teaspoon-sized amounts of the dough onto your prepared baking sheet. Bake them for five to eight minutes until the edges are brown and the biscuits look lace-like. Take them out of the oven and let them cool for five minutes before moving to a wire rack.
- Put the chocolate chips into a small plastic bag. Submerge the bag in barely simmering water until the chips have melted. Cut a tiny corner from the bag and pipe a chocolate squiggle onto every biscuit. Let the chocolate set completely before you store the biscuits.
