Figs with Goat's Cheese, Pistachios and Honey

Ingredients

  • 8 ripe figs halved
  • 100g log rind-on goat's cheese
  • 30g honey
  • 20g pistachios finely chopped
  • a few small thyme sprigs roughly chopped

Method

  1. Place the fig halves on a serving platter with their cut sides facing upwards. Slice the goat's cheese log into eight equal rounds, then halve each round.
  2. Press a piece of goat's cheese gently onto each fig half. Add a small pinch of salt and pepper, then finish by drizzling with the 30g of honey and sprinkling over the 20g of chopped pistachios and the thyme.
