Fig Bars

Ingredients

  • 3 cups dried figs
  • 1 cup water
  • 1 cup white sugar
  • 0.5 cup butter, softened
  • 1 cup white sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Method

  1. Soak the dried figs in 1 cup of water for 1 hour. Move the figs and water to a small saucepan, add 1 cup sugar, and cook until the mixture becomes thick and spoonable, roughly 30 minutes or more. Take off the heat and allow to cool.
  2. In a large bowl, use an electric mixer to beat the softened butter with 1 cup of sugar. Mix in the milk and vanilla extract until smooth. In a separate bowl, combine the all-purpose flour, baking powder, and salt, then stir this into the creamed butter mixture. Cover the dough and place it in the refrigerator for 1 hour.
  3. Heat your oven to 350 degrees F (175 degrees C). Use a little grease to prepare a 9x13-inch baking pan.
  4. Separate the chilled dough into two portions, kneading each one five or six times. On a surface dusted with flour, roll each portion into a 9x13-inch rectangle, approximately 1/4-inch thick. Place one rectangle in the greased pan, spread the cooled fig mixture over it, then top with the second dough rectangle.
  5. Bake in the heated oven for 25 to 30 minutes, until the top is golden brown. Allow the baked slab to cool completely before slicing it into 20 squares.
