This vibrant Mexican salad is a perfect no-cook option for a quick meal. It combines romaine lettuce with cooked chicken breast strips, cheddar cheese, tomatoes, and olives, all tossed in a tangy homemade dressing made from French dressing, salsa, and taco seasoning. Ingredients

  • 2/3 cup French dressing
  • 2/3 cup chunky salsa
  • 1 tablespoon taco seasoning mix
  • 9 cups chopped romaine lettuce (cos)
  • 9 ounces cooked chicken breast strips
  • 2 cups taco flavoured tortilla chips
  • 1 cup shredded cheddar cheese
  • 2 medium tomatoes, cut into wedges or diced
  • 1 (2 1/4 ounce) can sliced ripe olives, drained
  • 1/2 cup sour cream
  • taco flavoured tortilla chips, to garnish (optional)

Method

  1. Whisk the French dressing, chunky salsa, and taco seasoning mix together in a small bowl until well combined.
  2. Place the chopped romaine lettuce, cooked chicken breast strips, crushed taco flavoured tortilla chips, shredded cheddar cheese, tomato wedges, and drained sliced ripe olives into a large bowl.
  3. Gently toss the salad ingredients with the prepared dressing until everything is evenly coated.
  4. Evenly portion the dressed salad onto four plates and add a dollop of sour cream to the top of each serving.
  5. If you like, place additional taco flavoured tortilla chips around the border of each plate for garnish.
