Ingredients
- 3 cups about 12 ounces crumbled feta, preferably Greek
- 3 tablespoons dried basil
- 1 tablespoon cracked black peppercorns
- 2/3 cup extra-virgin olive oil, preferably Greek
- 6 tablespoons fresh lemon juice
- 1 teaspoon lemon zest, cut into very thin strips (julienne)
Method
- Combine the crumbled feta, dried basil, and cracked peppercorns in a food processor and pulse until mixed.
- Add the extra-virgin olive oil and fresh lemon juice to the processor, alternating between the two and pulsing after each addition.
- Continue processing until the mixture is dense yet spreads without difficulty.
- Transfer the whipped feta to a serving plate.
- Garnish the top with the thin strips of lemon zest before serving.
