These quick feta tacos offer a fresh take on a Mexican favourite. Coriander and feta cheese bring a vibrant flavour to a simple spiced bean mixture. Served on warm flour tortillas with crisp lettuce and ready-made guacamole, this dish is perfect for a casual lunch or a fun, interactive main course. It's ready in just 10 minutes, making it an ideal speedy meal for four people.

Feta Tacos with Guacamole

Ingredients

  • 2 tbsp olive oil
  • 2 medium red onions cut into thin wedges
  • 1 tsp cumin seeds
  • 2 x 215g cans refried beans
  • 10 cherry tomatoes
  • 1 small packet fresh coriander
  • 200g packet feta cheese
  • 8 small flour tortillas
  • 100g bag iceberg lettuce
  • 2 x 130g tubs ready-made fresh guacamole
  • 8 black olives optional

Method

  1. Set your oven to 190C/Gas 5/fan oven 170C. Warm the olive oil in a large pan, then fry the red onion wedges and cumin seeds until they become soft.
  2. Add the canned refried beans to the pan with the onions to warm them. Cut the cherry tomatoes in half, dice the feta cheese, and chop the fresh coriander. Stir these into the pan and heat gently until the mixture just begins to bubble.
  3. Place the flour tortillas directly onto the oven shelves to warm for 1-2 minutes, until they puff slightly. Let everyone assemble their own tacos by placing lettuce pieces on the warm tortillas, adding a spoonful of the spicy bean and feta mix, and finishing with guacamole and an optional black olive. Fold and serve immediately.
