Feta Spinach Salmon Roast
This elegant yet simple dish features two salmon fillets layered with a rich, creamy stuffing of feta cheese, cream cheese, fresh spinach and scallions. Baked in the oven, it creates a moist and flavourful roast that is sliced to serve. It's a perfect choice for a quick, low carb dinner, ready in about half an hour. The recipe yields two generous portions.
Ingredients
- 3 ounces cream cheese, softened
- 3/4 cup crumbled feta
- 2 scallions, thinly sliced,including green
- 1/2 cup fresh spinach, chopped
- 1 lb salmon fillet, sliced to make 2 filets
- olive oil
Method
- Set your oven to heat to 350 F degrees.
- Use a fork to mash and mix the softened cream cheese with the crumbled feta in a bowl until they are fully combined.
- Stir the thinly sliced scallions and chopped fresh spinach into the cheese mixture until everything is incorporated.
- Take one salmon fillet and cover it evenly with the cheese and spinach blend, creating a layer roughly 3/4-inch thick.
- Position the second salmon fillet on top to form a sandwich.
- Coat both sides of the assembled salmon with olive oil, carefully flipping it with a spatula, then transfer it to a shallow baking pan.
- Place the pan in the oven and bake for 20 minutes. you can check if it is cooked through by inserting a toothpick.
- For serving, use a sharp serrated knife to cut the roast into slices carefully.
- Serve immediately.
