Feta Spinach Salmon Roast

Ingredients

  • 3 ounces cream cheese, softened
  • 3/4 cup crumbled feta
  • 2 scallions, thinly sliced,including green
  • 1/2 cup fresh spinach, chopped
  • 1 lb salmon fillet, sliced to make 2 filets
  • olive oil

Method

  1. Set your oven to heat to 350 F degrees.
  2. Use a fork to mash and mix the softened cream cheese with the crumbled feta in a bowl until they are fully combined.
  3. Stir the thinly sliced scallions and chopped fresh spinach into the cheese mixture until everything is incorporated.
  4. Take one salmon fillet and cover it evenly with the cheese and spinach blend, creating a layer roughly 3/4-inch thick.
  5. Position the second salmon fillet on top to form a sandwich.
  6. Coat both sides of the assembled salmon with olive oil, carefully flipping it with a spatula, then transfer it to a shallow baking pan.
  7. Place the pan in the oven and bake for 20 minutes. you can check if it is cooked through by inserting a toothpick.
  8. For serving, use a sharp serrated knife to cut the roast into slices carefully.
  9. Serve immediately.
