Fereni Starch Pudding
Fereni is a classic Middle Eastern starch pudding, perfect for breakfast or dessert. This version creates a sweet, creamy base using cornstarch and milk, which is infused with the fragrance of whole cardamom seeds and ground almonds. A touch of rosewater adds a floral note. After a brief simmer, it is garnished with slivered almonds and can be enjoyed either warm or after chilling. It serves six people.
Ingredients
- 0.66666668653488 cup cornstarch
- 2 cups milk
- 0.5 cup ground almonds
- 6 whole cardamom seeds
- 0.25 cup white sugar, or to taste
- rosewater to taste
- 0.25 cup blanched slivered almonds
Method
- In a small bowl, mix the cornstarch with 1 cup of the milk until fully dissolved and set this aside.
- Place the other 1 cup of milk into a saucepan with the ground almonds and cardamom seeds. Bring this to a boil. Lower the heat and whisk in the prepared cornstarch mixture until smooth. Add the sugar and rosewater, stirring to combine. Return to a boil, stirring continuously, and let it boil for about 3 minutes.
- Take out the cardamom seeds. Spoon the finished pudding into individual dishes. Top with the blanched slivered almonds. This can be served either warm or cold.
