Enchilada Sauce

Ingredients

  • 0.25 cup vegetable oil
  • 0.25 cup New Mexico or California chili powder
  • 2 tablespoons self-rising flour
  • 1.5 cups water
  • 1 (8 ounce) can tomato sauce
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion salt
  • salt to taste

Method

  1. Warm the oil in a skillet. Add the chili powder and flour, then lower the heat. Cook for about 1 minute while stirring continuously until the mixture is aromatic and its colour darkens.
  2. Slowly add the water, tomato sauce, cumin, garlic powder, and onion salt, mixing until combined. Let it cook until it thickens a little, which should take about 10 minutes. Add salt as needed.
