Enchilada Sauce
This authentic Mexican enchilada sauce is ready in about 10 minutes of cooking time. It delivers a rich flavour from chili powder, cumin, garlic and onion, making it ideal for topping your favourite dishes like enchiladas or burritos. The recipe yields enough for six servings.
Ingredients
- 0.25 cup vegetable oil
- 0.25 cup New Mexico or California chili powder
- 2 tablespoons self-rising flour
- 1.5 cups water
- 1 (8 ounce) can tomato sauce
- 0.25 teaspoon ground cumin
- 0.25 teaspoon garlic powder
- 0.25 teaspoon onion salt
- salt to taste
Method
- Warm the oil in a skillet. Add the chili powder and flour, then lower the heat. Cook for about 1 minute while stirring continuously until the mixture is aromatic and its colour darkens.
- Slowly add the water, tomato sauce, cumin, garlic powder, and onion salt, mixing until combined. Let it cook until it thickens a little, which should take about 10 minutes. Add salt as needed.
- The sauce is ready to use.
