Ingredients
- 1 cup chicken broth
- 0.25 teaspoon soy sauce
- 0.25 teaspoon sesame oil
- 2 teaspoons water
- 1 teaspoon cornstarch
- 1 egg, beaten
- 1 drop yellow food coloring
- 0.5 teaspoon ground white pepper
- 0.125 teaspoon salt
- 1 teaspoon chopped fresh chives
Method
- Assemble all the required ingredients.
- Place the chicken broth, soy sauce, and sesame oil into a small saucepan and bring the mixture to a boil.
- Mix the 2 teaspoons water and 1 teaspoon cornstarch in a bowl until smooth, then add this slurry to the boiling broth along with the food colouring.
- While stirring the soup continuously in one direction, gradually pour in the beaten egg to create ribbons. Add the 0.5 teaspoon white pepper and 0.125 teaspoon salt.
- Ladle the soup into a bowl and top with the 1 teaspoon chopped chives before serving immediately.
