Ingredients

  • 1 cup chicken broth
  • 0.25 teaspoon soy sauce
  • 0.25 teaspoon sesame oil
  • 2 teaspoons water
  • 1 teaspoon cornstarch
  • 1 egg, beaten
  • 1 drop yellow food coloring
  • 0.5 teaspoon ground white pepper
  • 0.125 teaspoon salt
  • 1 teaspoon chopped fresh chives

Method

  1. Assemble all the required ingredients.
  2. Place the chicken broth, soy sauce, and sesame oil into a small saucepan and bring the mixture to a boil.
  3. Mix the 2 teaspoons water and 1 teaspoon cornstarch in a bowl until smooth, then add this slurry to the boiling broth along with the food colouring.
  4. While stirring the soup continuously in one direction, gradually pour in the beaten egg to create ribbons. Add the 0.5 teaspoon white pepper and 0.125 teaspoon salt.
