Effortless Raspberry Iced Mousse
This simple French mousse is a wonderfully quick dessert, ready in only 5 minutes. Using frozen raspberries and low-fat quark, it creates a creamy, lightly sweetened treat with a vibrant pink swirl. The addition of lemon juice balances the flavours beautifully. It's an ideal make-ahead option for buffets, lunches, or suppers, serving four people.
Ingredients
- 2 x 250g tubs quark (low-fat cream cheese)
- 50g icing sugar
- squeeze or two of lemon juice
- 250g pack of frozen raspberries
Method
- Place the quark and icing sugar into a large bowl. Add a squeeze of lemon juice and mix with a wooden spoon until the texture is creamy and smooth. This can be prepared up to an hour or two in advance.
- Fold the frozen raspberries into the mixture gently until they start to soften and create pink streaks. Check the flavour and add more lemon juice if desired. Divide the mousse between glasses and serve immediately.
