This vibrant dip offers a light and healthy option for entertaining. Frozen soya beans are blended with yoghurt, fresh chilli, lime and garlic to create a creamy, zesty base. Finely chopped red onion and coriander are stirred through for texture and freshness. It is designed to be served with an assortment of fresh vegetable sticks for dipping. The whole dish comes together in about 15 minutes, making it an ideal quick starter or canapé. Any leftover dip can be stored in the refrigerator.

Edamame and Chilli Dip with Crudités

Ingredients

  • 300g frozen soya bean
  • 150g low-fat natural yogurt
  • 1 red chilli chopped
  • juice 1 lime
  • 1 garlic clove crushed
  • 1 red onion finely chopped
  • handful coriander chopped
  • halved radishes sticks of carrots, celery and peppers, to serve

Method

  1. 1. Boil the frozen soya beans in salted water for 4 mins. Drain them and rinse under cold water to cool. 2. Place the cooled beans into a blender with the yoghurt, chopped red chilli, lime juice and crushed garlic clove. Process the mixture until it is completely smooth. 3. Transfer the blended dip to a bowl and gently mix in the finely chopped red onion and the handful of chopped coriander. 4. Present the dip alongside halved radishes and sticks of carrots, celery and peppers for serving. The dip can be covered and kept in the fridge for up to 3 days.
