Yogurt Flatbreads
These homemade yogurt flatbreads are wonderfully soft and fluffy, far surpassing any shop-bought version. The dough, enriched with yogurt and clarified butter, is kneaded and left to rise before being shaped and grilled. They cook in just 2-3 minutes per side, resulting in golden breads ideal for pairing with a meze spread or as a versatile side dish. This recipe yields 12 flatbreads and takes about 25 minutes of active preparation, plus proving time.
Ingredients
- 500g plain flour
- 1 tsp salt
- 1 tsp golden caster sugar
- 1 tsp fresh yeast or 1/3 tsp fast-action dried yeast
- 150ml full-fat milk
- 150g pot natural yogurt
- 60g clarified butter or ghee
Method
- Combine the flour, salt, sugar and yeast in a large bowl, mixing them thoroughly. Warm the milk in a saucepan until it is lukewarm. Stir in all but 1 tbsp of the yogurt. Melt the butter and incorporate it into the milk and yogurt mixture.
- Gradually pour the wet ingredients into the flour, mixing to form a dough. Knead this for 10 mins until it becomes springy. Allow the dough to prove in a warm spot for about 1 hr, or until it has doubled in size.
- Split the risen dough into 10 equal pieces. Set your grill to medium and place a large baking tray underneath to warm for about 10 mins. Flatten each dough piece, roll it into a rough teardrop shape, and brush with the reserved yogurt. Cook on the preheated tray under a moderate heat for 2-3 mins per side until golden, watching them closely as they can burn very quickly.
