Seed and Grain Loaf
This British loaf combines mixed grain flour with sesame and poppy seeds for a hearty texture. The dough, enriched with olive oil and honey, is kneaded, left to rise, and then baked until golden brown. It yields eight thick slices, making it an ideal side dish or snack. The total preparation and baking time is 50 minutes.
Ingredients
- 500g mixed grain flour
- 1 tbsp each sesame and poppy seeds, plus extra for topping
- 1 sachet fast-action yeast
- 1 tsp salt
- 300ml hand-hot water
- 2 tbsp olive oil
- 1 tbsp clear honey
Method
- Combine the flour, seeds, yeast and salt in a large mixing bowl. In a separate jug, mix the water, oil and honey, then pour this into the dry ingredients while stirring to form a soft dough. Should the dough feel sticky, incorporate a small amount of extra flour.
- Transfer the dough to a surface dusted with flour and knead it for 5 mins. Continue until it is no longer sticky, adding a little more flour as necessary during kneading.
- Lightly oil a 1.2-litre loaf tin and place the dough inside, pressing it down evenly. Cover the tin with a tea towel and allow the dough to rise for 1 hr, or until it springs back when pressed. Meanwhile, preheat your oven to 200C/fan 180C/gas 6.
- Score the top of the loaf with eight slashes, then brush it with water. Sprinkle poppy and sesame seeds alternately over the top. Bake for 30-35 mins until the loaf is well-risen and browned. Turn it out onto a wire rack to cool completely.
