Pan-Fried Cod
This simple British dish is an ideal weeknight dinner for two. Chunky cod fillets are pan-fried atop a colourful mix of potatoes, peppers, red onion, and green beans, all cooked in a flavourful oil from a jar of mixed peppers. The meal is finished with a squeeze of lemon and served with fresh crusty bread to soak up the delicious juices. It's a filling and vibrant supper that comes together in only 20 minutes.
Ingredients
- 250g jar mixed pepper with herbs
- 250g new potato scrubbed and thickly sliced
- 1 red onion cut into wedges
- 140g green bean trimmed and halved
- 175g chunky cod or salmon fillets, skin on
- half a lemon
- crusty bread to serve
Method
- Empty the oil from the jar of peppers into a deep frying pan. Warm the oil until it bubbles, then add the sliced potatoes and onion wedges, tossing to coat. Cook for 5 mins, stirring occasionally, until the potatoes start to colour.
- Pour away most of the oil from the pan, leaving roughly 1 tbsp behind. Add the halved beans and the drained peppers, season, and stir to combine. Place the fish fillets on the vegetables, skin side facing down.
- Put a lid on the pan and cook for 5 mins more or until the fish flakes apart with a fork and the vegetables are soft. Squeeze the juice from the lemon half over the fish and serve alongside crusty bread.
