Oven-Baked Chicken Cordon Bleu
This American dinner dish features chicken cutlets layered with ham and sharp Cheddar cheese, then baked until golden. The chicken is coated in a seasoned breadcrumb crust and cooked in a single pan, resulting in a meal that is ready in less than one hour. It's a straightforward version of the classic cordon bleu, perfect for a weeknight.
Ingredients
- cooking spray
- 6 boneless, skinless chicken breast cutlets
- 0.5 teaspoon salt
- 0.5 teaspoon ground black pepper
- 6 thin slices deli ham
- 2 cups shredded sharp Cheddar cheese, divided
- 3 tablespoons all-purpose flour
- 1 egg, beaten
- 2 tablespoons milk
- 1.25 cups bread crumbs
- 1 tablespoon garlic powder
- 1 teaspoon oregano
- 2 tablespoons butter, melted
- 0.5 cup chicken broth
Method
- Heat your oven to 350 degrees F (175 degrees C). Use cooking spray to grease a 9x13-inch baking pan.
- Arrange three chicken cutlets in the prepared pan and season with salt and pepper. Place ham slices over them, leaving a small border. Scatter 1 1/2 cups of the Cheddar cheese over the ham. Place the remaining three cutlets on top to cover the cheese. Dust the top with flour, spreading it evenly.
- In a separate bowl, mix the beaten egg with the milk. Pour this mixture over the chicken.
- Combine the bread crumbs and oregano in a bowl. Sprinkle this mixture over the chicken to coat the top and sides. Spoon any pooled egg mixture from the pan back over the chicken. Drizzle the melted butter on top and pour the chicken broth around the edges. Finish by sprinkling the remaining 1/2 cup of Cheddar cheese over the top.
- Bake in the preheated oven for 30 to 35 minutes. The chicken should no longer be pink inside and the juices should run clear. An instant-read thermometer inserted into the centre should read at least 165 degrees F (74 degrees C).
- Switch the oven to the broil setting. Cook for about 5 minutes more until the top is crispy and golden brown.
