Easy Orange Roughy
This straightforward American dinner features orange roughy fillets cooked under the broiler. The fish is first seasoned with fresh lemon juice, then finished with a flavourful topping made from grated Parmesan cheese, softened butter, a Dijon mustard mayonnaise blend, garlic and salt. A final sprinkle of paprika adds colour before a quick broil to lightly brown the topping and perfectly cook the tender fish. The entire dish is ready in just 20 minutes, serving four people.
Ingredients
- 4 (4 ounce) fillets orange roughy
- 0.5 lemon
- 0.5 cup grated Parmesan cheese
- 0.25 cup butter, softened
- 0.25 cup prepared Dijon mustard mayonnaise blend
- 1 large clove garlic, pressed
- 0.25 teaspoon salt
- 0.5 teaspoon paprika, or to taste
Method
- Turn on your oven's broiler and position a rack roughly 6 inches from the heating element.
- Arrange the orange roughy fillets on a broiler pan and drizzle with juice from the lemon half.
- Cook the fish under the preheated broiler for 6 to 8 minutes.
- Mix the grated Parmesan, softened butter, Dijon mustard mayonnaise blend, pressed garlic and 0.25 teaspoon salt in a bowl. Spoon this mixture over the partially cooked fillets, then dust with 0.5 teaspoon paprika.
- Return the pan to the broiler and cook for about 3 minutes, until the cheese topping is golden and the fish separates easily with a fork.
