No-Bake Chocolate Oatmeal Cookies
These American dessert cookies require no oven. A mixture of sugar, milk, butter and cocoa is boiled briefly before being combined with quick oats, shredded coconut, peanut butter and vanilla. The dough is then portioned and chilled until firm, yielding about 20 cookies in roughly 70 minutes total time.
Ingredients
- 2 cups white sugar
- 0.5 cup milk
- 0.5 cup butter
- 0.5 cup cocoa powder
- 3 cups quick oats
- 0.5 cup shredded coconut
- 0.5 cup peanut butter
- 1 teaspoon vanilla extract
Method
- Combine the sugar, milk, butter and cocoa powder in a large saucepan. Bring the mixture to a rolling boil and continue boiling for about 1 minute, stirring often. Take the pan off the heat and stir in the oats, coconut, peanut butter and vanilla extract until fully combined.
- Spoon tablespoon-sized portions of the mixture onto sheets of waxed paper. Place them in the refrigerator to cool and set for at least 1 hour.
