Easy Mint Sauce
Forget the shop-bought jar and prepare this vibrant, zesty mint sauce at home. It combines fresh mint and parsley with briny capers, lemon zest, sherry vinegar and olive oil for a much brighter flavour. Ready in only 10 minutes, it is an ideal accompaniment for roast lamb, especially during festive meals. This recipe yields enough to serve 6 to 8 people.
Ingredients
- 1 small bunch of mint leaves picked and roughly chopped
- 1/2 small bunch of parsley roughly chopped
- 1 tbsp capers
- 30ml extra virgin olive oil
- 1 tbsp light brown soft sugar
- 50ml sherry vinegar
- 1 lemon zested
Method
- Place the mint leaves, parsley and capers into the small bowl of a food processor and process until they are finely chopped.
- Pour in the oil, sugar, vinegar and lemon zest and process once more until the mixture is smooth. Season according to your preference before serving.
