Easy Kolacky

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1 cup butter
  • 0.5 cup confectioners' sugar
  • 2 cups all-purpose flour
  • 1 (12.5 ounce) can apricot fruit filling (such as Solo®)
  • 0.25 cup confectioners' sugar for dusting

Method

  1. In a large bowl, combine the softened cream cheese and butter, beating them with an electric mixer until the mixture is smooth and creamy. Mix in 1/2 cup of confectioners' sugar. Gradually beat the flour into the butter mixture until fully incorporated. Cover the bowl and place it in the refrigerator for at least 3 hours or leave it overnight.
  2. Heat your oven to 375 degrees F (190 degrees C).
  3. On a surface that is generously floured, roll the chilled dough out to a thickness of 1/8-inch. Using a pizza wheel, cut the dough into 36 squares, each measuring 2 1/2 inches.
  4. Place approximately 2 teaspoons of the apricot filling in the middle of every dough square, being careful not to add too much. Bring the opposite corners of each square together over the filling, pinching the dough firmly at the centre to seal it. A little filling should remain visible at each end. Arrange the shaped cookies on a baking sheet that does not require greasing.
  5. Bake the cookies in your preheated oven for about 12 minutes, until they are set but have not taken on any colour. Transfer them to wire racks to cool completely. Once cooled, dust the kolacky with the remaining 1/4 cup of powdered sugar.
