Huevos Rancheros

Ingredients

  • 2 tablespoons vegetable oil
  • 4 (6 inch) corn tortillas
  • 1 cup refried beans with green chilies
  • 1 teaspoon butter
  • 4 eggs
  • 1 cup shredded Cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 0.5 cup salsa

Method

  1. Assemble the required ingredients.
  2. Warm the vegetable oil in a large skillet. Fry two tortillas at once for about 30 seconds on each side until they are firm. Transfer them to paper towels.
  3. Lower the heat and add more oil if needed. Crack the eggs into the skillet and cook for about 1 minute until the edges turn opaque. Cover the pan, reduce the heat further, and continue cooking for about 4 minutes until the egg whites are fully set.
  4. As the eggs cook, mix the refried beans with butter in a microwave-safe bowl. Cover it and heat on high in 1-minute bursts until warmed through.
  5. Place the prepared tortillas on serving plates and spread a layer of the hot beans over each one.
  6. Finish each tortilla with shredded Cheddar cheese, a fried egg, some crumbled bacon and a serving of salsa.
