Huevos Rancheros
This satisfying breakfast dish features corn tortillas fried until firm, then layered with warm refried beans and a perfectly cooked fried egg. Each serving is finished with shredded Cheddar cheese, crumbled bacon and a spoonful of salsa for a hearty start to the day. The entire meal comes together quickly, requiring only 15 minutes from start to finish.
Ingredients
- 2 tablespoons vegetable oil
- 4 (6 inch) corn tortillas
- 1 cup refried beans with green chilies
- 1 teaspoon butter
- 4 eggs
- 1 cup shredded Cheddar cheese
- 8 slices bacon, cooked and crumbled
- 0.5 cup salsa
Method
- Assemble the required ingredients.
- Warm the vegetable oil in a large skillet. Fry two tortillas at once for about 30 seconds on each side until they are firm. Transfer them to paper towels.
- Lower the heat and add more oil if needed. Crack the eggs into the skillet and cook for about 1 minute until the edges turn opaque. Cover the pan, reduce the heat further, and continue cooking for about 4 minutes until the egg whites are fully set.
- As the eggs cook, mix the refried beans with butter in a microwave-safe bowl. Cover it and heat on high in 1-minute bursts until warmed through.
- Place the prepared tortillas on serving plates and spread a layer of the hot beans over each one.
- Finish each tortilla with shredded Cheddar cheese, a fried egg, some crumbled bacon and a serving of salsa.
