Easy Chicken Salad
This is a wonderfully straightforward chicken salad I first made as a child. It has since become a favourite with my colleagues. The recipe is incredibly simple, creating a versatile dish ideal for warm weather. You can enjoy it atop a green salad, as a sandwich filler, or with crackers. Feel free to include chopped celery if you have some. It yields enough for two servings.
Ingredients
- 2 boneless skinless chicken breasts
- 1/2 onion (optional)
- 1/2 green pepper (optional)
- salt and pepper
- mayonnaise (Low Fat/low carb mayo works just as well)
Method
- Clean the chicken and place it in a pot of water.
- Bring the water to a boil and cook the chicken until it is fully done.
- Allow the cooked chicken to cool down.
- Use your hands to shred the cooled chicken into a bowl.
- Mix in the chopped onions and green peppers.
- Stir in mayonnaise according to your preference.
- Season with salt and pepper, then refrigerate until chilled.
- This mixture can be used to prepare a salad.
- Another option is to take a pita bread and open it up.
- Spread the chicken mixture inside and add tomatoes and lettuce.
