This straightforward recipe yields a delicious homemade cherry jam. Using a combination of chopped and halved cherries, it cooks into a thick, glossy preserve. The jam is ideal for filling cakes, topping fresh bread, or packaging into jars for presents. It requires about 75 minutes of total preparation and cooking time.

Easy Cherry Jam

Ingredients

  • 2kg cherries pitted, 1/2 roughly chopped, 1/2 halved
  • 1.2kg jam or preserving sugar (with added pectin)
  • 2 lemons juiced

Method

  1. Place two saucers into the freezer to chill for testing the jam's set later. Combine the cherries, sugar, and lemon juice in a large, heavy-bottomed pan. Allow the mixture to simmer without a lid for 35-50 mins, stirring often, until it becomes thick and glossy.
  2. Once 35 mins have passed, place a small amount of jam onto one of the cold saucers. Wait for 1 min, then push your fingertip gently into the jam. If the surface wrinkles, it is set. If it remains liquid, boil the jam for another 10 mins and repeat the test using the second chilled saucer.
  3. Carefully ladle the hot jam into sterilised jars and secure the lids. Unopened jars will keep for six months in a dark, cool cupboard. Once opened, store the jam in the fridge and use within three months.
